from left:
Smoked Salmon with Fried Capers and Beurre Maitre D'Hotel
(capers are buds from the caper bush - i always thought they were fish-related lol. and the last part means butter with herbs and other flavorings. which is strange because we actually used cream cheese...curious)
Roast Beef with Remoulade and Fried Shallots
(remoulade is a spread, this one is made with mayo, mustard, gherkin, capers, lemon, parsley, salt & pepper)
Shrimp Waldorf (waldorf has celery, apple, walnut, mayo and herbs/spices)
Gravlax with Cucumber, Radish and Ginger Threads
(gravlax is Norwegian, something about how they used to bury the salmon to cure it)
next we made a cream soup (from random ingredients distributed by our instructors - we got mushrooms. yuck.) and tea sandwiches.
from left:
Roast Beef Roll-up things (they don't have a name cuz they got made up from leftover meat and spread)
Cucumber Tea Sandwiches (cream cheese, cucumber, bread! pretty simple)
Parmesan Crisp (frico) with Herbed Goat Cheese Quenelle and Honey. i have no idea what quenelle means. but that is a walnut on top :)
this weekend i am flying to Ontario for my college roommate's wedding! no time for homework :D
